Right now I have beef barley soup simmering on the stove. This is one of my full proof go-to recipes. The main reason? EVERYONE in my family loves it.
It’s a delicious soup and it’s so easy to make.
Ingredients
- 1lb of ground beef
- 1 large onion
- 2 x 28oz cans stewed tomatoes or diced tomatoes
- 1 litre beef stock
- 2 cups water or half to 3/4 of empty tomato can
- 3 carrots sliced
- 3 med potatoes diced
- 3 celery stalks diced
- 1/2 cup barley
- 3 bay leaves
- 2 tbs Worcester sauce
- Salt & pepper
Directions
- Cook beef, season with salt/pepper. (Soak up excess fat with paper towel).
- Add onions, celery and cook for 3-4 min or until slightly soft.
- Add all other ingredients.
- Cook at a low boil for 1.5 to 2 hrs.
I always serve it up with some tasty french bread. My kids (and husband) gobble this soup up. It is so tasty and leaves my kitchen smelling amazing.
This recipe makes a lot of soup. It also freezes well. I always make sure I have some in the freezer to enjoy again in a few weeks.
