Beef Barley Soup the Kids will Eat #recipe

Right now I have beef barley soup simmering on the stove. This is one of my full proof go-to recipes. The main reason? EVERYONE in my family loves it.

It’s a delicious soup and it’s so easy to make.

Ingredients

  • 1lb of ground beef
  • 1 large onion
  • 2 x 28oz cans stewed tomatoes or diced tomatoes
  • 1 litre beef stock
  • 2 cups water or half to 3/4 of empty tomato can
  • 3 carrots sliced
  • 3 med potatoes diced
  • 3 celery stalks diced
  • 1/2 cup barley
  • 3 bay leaves
  • 2 tbs Worcester sauce
  • Salt & pepper

Directions

  • Cook beef, season with salt/pepper. Ā (Soak up excess fat with paper towel).
  • Add onions, celery and cook for 3-4 min or until slightly soft.
  • Add all other ingredients.
  • Cook at a low boil for 1.5 to 2 hrs.

I always serve it up with some tasty french bread. My kids (and husband) gobble this soup up. It is so tasty and leaves my kitchen smelling amazing.

This recipe makes a lot of soup. It also freezes well. I always make sure I have some in the freezer to enjoy again in a few weeks.
