Looking for an easy pasta salad recipe? Summer is here and I don’t want to be cooking hot meals every lunch and dinner.
Luckily my kids love pasta salad. Pasta salad is easy to make and makes a great side dish or a small meal.
Here’s the pasta salad recipe I’ve been making for my family!
What You Need:
- 2 cups of pasta (I usually use Farfalle – my kids LOVE the bows!)
- 2 cups of fresh broccoli (chopped into small pieces)
- 1 cup of diced tomatoes
- 1/3 cup of italian salad dressing
- 1/4 cup of parmesan cheese (I just sprinkle a good amount on the pasta)
Make it:
- Cook pasta until al dente.
- Add broccoli to boiling water about 2 minutes before the pasta has finished cooking.
- Drain and place in a medium bowl.
- Mix in all other ingredients.
- Cool in fridge for a few hours before serving.
You can add just about any vegetable to a pasta salad. What do your kids love in their pasta salad?
I just love this, but the dressing is so heavy. I just use 1 tblsp. evol, Italian seasonings, oregano! 1/4 cup of red wine vinegar (to your taste, add a little at a time) and finish with 1/4 Feta cheese.
It doesn’t last long so reserve a bowl for yourself.
