Baby Food Recipe: Cheese, Leek, Sweet Potato, Cauliflower?

Yup, you read the title correctly – I too was shocked that this could be a baby food recipe!  I thought this was something I would want to eat (maybe not pureed, but you get my drift).  I’ve been introducing new solids to my little girl for a couple months now and I gotta say, I’m loving every minute of it and I love discovering new recipes, cause after a while, they gotta get sick of the same old same old too, right?

This recipe is from my First Meals book that I got from DK Canada.  I love this book, I’ve used it so much since receiving it.  This recipe was intriguing though and I think my baby was ready to try something a little different – other than the usual yam, carrots, broccoli, etc…

Here goes nothing!

Ingredients:

  • 1 Tbsp butter or margarine
  • 1/4 cup of chopped leeks
  • 3 Tbsp cheddar cheese
  • 1 sweet potato, cubed
  • 3/4 cups chopped cauliflower
  • 1 cup boiling water

Method:

  • Melt the butter in a saucepan and sauté the leeks for a few minutes
  • Add the sweet potato and boiling water and cook for another 5 minutes
  • Add the cauliflower and cook for another 5 minutes
  • Strain the veggies and reserve 1/3 cup of the liquid for pureeing
  • Puree and add the cheese at this point

Note: I didn’t have enough of the liquid left after boiling all the veggies down so I added additional water so that the veggies would puree.  I actually left it a little chunkier because I like giving my little girl some texture, so puree as little or as much as you prefer.

I’m going to use the word again – shocked!  My little one just gulped up this meal.  I gave it to her for both her lunch and her dinner and she just couldn’t get enough.  This recipe makes enough to freeze a few portions and I’m glad I have them for next week.  She’ll be happy when it’s Cheesy Leek, Sweet Potato and Cauliflower puree night again.

  1. Thanks for the recipe. How old is your daughter? Mine will be 6 months next week and we just started on solids this week. Started with avocado and moving to sweet potato next. Any good recipes with meat/protein for this age to share?

    1. Hey Angie! My daughter is 8 1/2 months old. For protein/meats at 6 months I actually just offered her really small pieces of chicken or steak and watched her closely to make sure she didn’t choke! I also baked a chicken thigh in a ramekin, sprayed with olive oil, and when cooled I just pulsed it in my food processor. I used the juices with a little water to add moisture and she loved it! Hope that helps, good luck!
