Easy and Delicious Dessert: Berry Cobbler

I discovered this dessert while watching one of my many favourite cooking shows – The Pioneer Woman.  I love to cook and bake, but with my 4-month old daughter, it can be a bit of challenge finding the time or the energy to cook up a storm.  So, I love it when I find easy recipes that taste super yummy.

I tested this recipe on my picky husband and my entire family – including a 3 and 6 year old.  Everyone liked it!

What I like about this recipe is that you can slowly build the recipe in chunks throughout the day if needed.  That’s something I find helpful when I never know when my little one is going to have a freak-out session and I’ll need to give her my full attention, needing to put whatever I’m doing aside to tend to her.

Here’s the recipe (serves about 4-6, depending on portion size):

  • 1/2 cup melted butter (more for buttering your dish, or you can spray with a non-stick spray)
  • 1 cup milk
  • 1 cup white sugar, plus a bit more for sprinkling on top
  • 1 cup flour
  • 2 cups blackberries (you can use fresh or frozen, I’ve done both, just note that if you use frozen, I would suggest thawing them first and patting them dry. When they thaw, they really diminish, so you might want to set aside 3 cups if you’re doing frozen)

Quick note: the last time I did this I used pre-packaged mixed berries – the kind you would use in your smoothie.  It worked out really well.  The mix included blackberries, blueberries and raspberries.

Directions:

  • Melt the butter in the microwave and let it sit for a few minutes while you prepare the rest
  • Butter or spray your dish (I use shallow casserole dishes)
  • In a bowl, mix together the flour and the sugar
  • Add the milk and whisk until smooth
  • Slowly whisk in the butter
  • Poor into your dish and top off with the berries
  • Bake at 350 degrees for 1 hour.  Sprinkle with a little more sugar about 10 minutes before the end of baking.

Voila!  Super easy, super delicious desserts that you can prepare in phases.  This dessert is moist, just sweet enough and can be served with whipped cream or ice cream, or just plain – which is how I serve it.  I think it’s good just the way it is.
