Lunch Box Favourite: Banana Bread Muffins

I can hardly believe that school starts again next week.

This means my husband and I will be busy every night (and mornings) getting lunch boxes filled with snacks our kids love.

One thing that my children always love seeing in their lunch boxes are mini Banana Bread Muffins.

{My Recipe}

Here’s the recipe I follow for my mini Banana Bread Muffins

  • 3-4 ripe bananas, mashed
  • 3/4 cup sugar
  • 1/2 cup melted butter
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1/2 cup of chocolate chips
  1. Mash bananas and sugar.
  2. Add melted butter, salt and baking soda. Mix well.
  3. Add flour.
  4. Pour batter in a mini cupcake tin (I always spray mine with non-stick spray. You do not need muffin wrappers)
  5. Bake at 375 degrees for approx 15-20 min.

My kids (and husband) adore this recipe. I love making these muffins in a mini muffin tin because I believe this size is perfect for little eaters.

  1. Yum! Who wouldn’t love this? Thanks for sharing the recipe – it looks super easy and definitely one I will try. We use mini silicone muffin tins and muffins pop out like a breeze!
