Baked pasta is always one of my favourite meals. I love that it’s a meal I can prepare ahead and pop in the oven.
One of my families’ favourite baked dishes is a cheesy rigatoni with bacon. (Because everything tastes better with bacon right?)
What you need:
- 4 cups of pasta (I use rigatoni)
- 2 cups of pasta sauce
- 1 can diced tomatoes (389ml)
- 185g of Brick Cream Cheese (about 3/4 of a 250g package)
- 1 1/2 half cups of shredded cheese
- 1/3 cup of parmesan grated cheese
- 6-8 pieces of bacon
Make it:
1 – Cook pasta in a large pot. Meanwhile, cook the bacon in a pan. When the bacon is done, drain the grease and keep it aside.
2 – Drain the pasta and keep aside. Cut the bacon into bite sized pieces.
3 – Add pasta sauce, diced tomatoes and cream cheese to the pot. Cook on medium heat for about 5 minutes. Stir frequently. NOTE: You may want to cut the cream cheese into cubes before adding it to the sauce mix.
4 – Once the sauce is bubbling add the bacon.
5 – Return pasta to the pot. Mix well with sauce mixture.
6 – Add half of the pasta mixture to a baking dish. Sprinkle with a generous amount of shredded cheese.
7 – Add the remaining pasta mixture. Top with the remaining shredded cheese and parmesan grated cheese.
8 – Bake at 375 degrees for about 20min.
This looks delicious! We really like pasta dishes and I bet the bacon adds a nice twist.
