My kids LOVE it when I make soup for dinner.
I like making soup because it’s an easy one pot meal. Soups usually include tons of great veggies and I can freeze the leftovers for another night.
This week I made a yummy Minestrone soup that I’m adding to my soup rotation.
{What you Need}
- 1 tbsp. olive oil
- 1 large onion, chopped
- 3 carrots, peeled and chopped
- 3 handfulls of fresh spinach
- 1 large can (796ml) of diced tomatoes
- 4 cups of vegetable stock
- 2/3 cups of penne (or other noodle you’d like to use)
- 1 can (540ml) of kidney beans, rinsed
{Make it}
1. In a large stock pot heat oil, add onions and carrots and cook, stirring occasionally for about 5 minutes. Stir in handfulls of spinach and cook until it wilts.
2. Add the tomatoes and cook. Continue stirring.
3. Pour in stock and bring to a boil.
4. Reduce heat to medium and continue cooking for about 10 minutes. Season with salt and pepper.
5. Stir in pasta and bring to a boil. Continue to cook until pasta is tender.
6. Stir in the beans and cook until heated through.
My entire family loved this soup! I loved how easy it was to make!

My slow cooker has been on the go more lately…..I think a good soup in needed, regardless of the heat!
I enjoy creamy soups, like cream of mushroom or cream broccoli

I haven’t decided which one I will make….but, I have to tell you, they look better than mine. I love homemade soups!

Thanks for the links to these wonderful soups,can you believe ive never made Potato soups,but Leek and Potato soup from The Knit Wit sounds delicious and i am going to try it maybe on the weekend if i get out to pick up the leek
